    This fire charred, roasted cheesy cauliflower is a delicious side dish to a campfire roast! I’ve even made this on the BBQ to great effect. Using foil and a little water essentially steams the cauliflower making sure it is cooked until tender. Then, exposing the root vegetable to flames towards the end of the cooking, until the edges are crisp and caramelised, brings a new element of flavour to what can easily be a boring accompaniment.

    So imagine that fire charred, flavour-packed cauliflower and then smother it in grated cheddar cheese and a good turn of freshly ground pepper. This Roasted Cheesy Cauliflower dish is incredible to eat and even easier to prepare and cook. The last time I served it was as a vegetable side to this Chicken Stew but honestly, you could serve this as the main event in a vegetarian meal. I have even seen some vegetarians serving whole roasted cauliflowers like you would a Sunday roast. I haven’t got that far yet!

    I love the flavour of Roasted Cheesy Cauliflower with a load of pepper but cauliflower also works really well with traditional Indian flavours such as fennel and cumin, so you could sprinkle some seeds into your tin foil pouch. If you’re thinking more traditional or Christmas flavours, try adding a dollop of mustard or even a grating of nutmeg with the cheese for a spicy, festive hit.

    Get a good campfire going and let it burn down to embers. Chop up the cauliflower into big bite-sized chunks. Using good quality foil,make a parcel and place the chunks inside with the water. Wrap the foil around the cauliflower making a sealed parcel that's not too tight. You want the steam to be trapped but to be able to move around in the parcel. Don't overfill them. My cauliflower was quite big, so I did it in two batches.

    Place your parcels on the embers and let the cauliflower steam for around 20 minutes. Turn them every 5 minutes to avoid hotspots and make sure everything is cooked.

    Open one up and check the cauliflower is cooked by poking it with a knife, it should be soft but not mush. Start to bring a bit more flame back to the fire. Drain the parcels and open them up a bit and turn to the fire. Let them char and caramelise for a few minutes, not too black!

    Give the cauliflowers a good sprinkle of black pepper and now top with the grated cheese. Rewrap with the foil and set back on the embers for 2 minutes until the cheese is melted and bubbling. Get off the fire and allow to cool slightly before serving. The Steamed and Roasted Cheesy Cauliflower will be very hot coming off the heat.
