Campfire Bananas stuffed with Chocolate and Marshmallows

This is more of a rite of passage for young Scouts than it is a dessert

    Everyone loves stuffed Campfire Bananas when they’re on camp. It’s one of the tastiest, easiest desserts to make when you are out and about. Simply peel a section of the banana back, slice the banana and stuff with your favourite filling. Maybe you were making our Simple Banana Pancakes for breakfast? Why not pack a few extra bananas for this tasty dessert!

    Today we are going with chocolate buttons and mini marshmallows but I’ve tried this with nuts, strawberries and toffee (Rolos are pretty good). Anything goes. I like to slice the banana across the short way and remove a piece. This way you can squeeze ever more fillings into your Campfire Bananas.

    This is a little bit simpler if you have foil as you don’t need to worry about it spilling out. But I forgot the foil this time. Luckily nature provided us with the banana peel which will protect it from the heat. Simply peel a section without pulling it off, slice and fill it up with your chosen toppings and close the lid.

    Cook your Campfire Bananas on a nice bed of embers, really you’re just heating it up and making sure your toppings, in this case chocolate and marshmallows, have gone all gooey and melty. This is a recipe that every Scout has to make at some stage and every Cub Scout should have a go at!

    Simply peel back a section of the banana peel from the inside of the crescent shape.

    Slice the banana across the short way and remove a section or two. Stuff the banana with your chosen toppings!

    Replace the peel lid and wrap if foil if you're using it. Carefully, set your banana (cut side up) in the embers of your fire.

    Check it often, there isn't really any cooking happening here. You just want to soften the banana a bit and melt the chocolate and marshmallows!

    Alternate Fillings

    Chocolate buttons and marshmallows are a great starting place but you should mix it up a bit and don't be afraid to experiment. Here are some other fillings you should give a go!

    White chocolate and strawberry.
    Digestive biscuit and toffee sauce.
    Pecans and pieces of fudge.
