400ml Ketchup I use the reduced salt and sugar kind
300ml Apple Juice
100ml Apple Cider Vinegar
6 Tbsp Demerera Sugar
2 Tbsp Wholegrain Mustard
35ml Bushmills Irish Whiskey Optional
Half the juice of 1 Lemon
2 Tbsp Honey
2 Tbsp Worcestershire Sauce
1 Tsp Cayenne Pepper
0.5 Tsp Garlic Powder
Salt To Taste
Pepper To Taste

    This BBQ Sauce recipe will go perfectly with grilled meats such as chicken or beef. We made this delicious sticky sauce to go with pulled pork. The recipe couldn’t be much easier; simply mix all of the ingredients together in a saucepan and simmer.

    Give my BBQ Sauce recipe a try first and then have a think about what you like about it and what you would change. For example, some people would prefer a sweeter sauce to the one I’ve made here, so they might had more sugar or honey. For me personally, I’d prefer a spicier sauce but I knew some of the people eating wouldn’t, so I reduced the amount of chilli I might have used normally. This recipe should produce a nice, sweet yet vinegary BBQ Sauce with a hint of mustard and chilli. The flavour of apple works well with the pulled pork.




    You may also wonder why I chose to use a bottle of reduced salt and sugar ketchup. The reasons for this are two-fold. Firstly, it meant me as the cook could control the level of sweetness and seasoning a bit more but also, it was the only sauce we had that night in the middle of nowhere, near Cushendall on the North Coast of Ireland on a stormy New Year’s Eve. So we had to make do!

    We were staying in Cushendall for a few nights with friends to celebrate the New Year, we were only around 25 miles from the Bushmills. Bushmills Whiskey Distillery is the oldest in the world; having been legally producing whiskey for around 410 years. It would be rude to not add a wee shot into our BBQ Sauce. The alcohol will completely cook out so don’t be worried about that but of course, you can leave this out if you want. The whiskey does add a bit of depth and smokiness to the sauce.

    This awesome BBQ Sauce worked perfectly with our New Year’s Feast of Pulled Pork Tacos and Homemade Guacamole. I hope you enjoy it as much as we did.

    If cooking on fire, prepare your fire for a long, slow burn. This sauce will cook for anything between 1.5 and 2 hours. Rub the underside of your pot with washing up liquid. This will make it easier to clean afterwards.

    Starting with the wet ingredients, add everything into the saucepan and mix together.

    Next, bring the sauce to the boil and then reduce the heat. Mix frequently and allow to simmer gently until you have a thick, shiny sauce which sticks to your whisk. It will take around 1.5 to 2 hours.

    Allow to cool slightly before serving. Pour as much as you can into a bowl for serving, scraping every single drop in. Again, making do, we used a gravy boat. I have to say the boat worked perfectly!
