2 cups Plain White Flour
2 tablespoons Sugar
4 teaspoons Baking Powder
0.5 teaspoon Salt
2 Eggs
2 cups Milk
4 tablespoons Vegetable oil
4 Bananas

    It’s that time of year again, Shrove Tuesday, or better known to us in Ireland as Pancake Tuesday. Pancakes are associated with the day preceding Lent because they were a way to use up rich foods such as eggs, milk, and sugar, before the fasting season of the 40 days of Lent. The liturgical fasting emphasised eating plainer food and refraining from food that would give pleasure: in many cultures, this means no meat, dairy products, or eggs.

    Personally, I just like to use it as an excuse to make pancakes…

    If pancakes aren’t your thing, you should try our french toast made using brioche buns.

    Mix your flour, sugar, baking powder and salt together.

    Mash up your bananas in a separate container and add to your mixture.

    Combine your eggs, milk and vegetable oil and stir together. The batter will be lumpy, don't worry - this is normal!

    Heat a lightly oiled pan over the fire. Try to keep it at the edge of the fire to use a medium heat.

    Pour some batter onto the pan. I used a small pan so the batter would fill the entirety of my pan.
    Cook until the pancakes are golden brown on both sides.

    Serve with traditional maple syrup and left over banana.
